Brazilish Rice Pudding

I love rice pudding, the Brazilian one "arroz doce" or the English one, it doesn't matter, I love it!!!
The main difference between them is that the Brazilian is very sweet (too sweet) and the English is more bland (the reason why it is normally served with fruit compotes, I believe). And I thought it was time for me to mix these two versions of the same desert and do my own, the Brazilish one...
My ingredients:
200g of rice
650ml of water
1 tbsp of butter
75g of sugar
500ml of milk
150g (1/2 can) of condensed milk
200g of double cream
1 clove
1 tsp of grated nutmeg
Cinnamon to serve
Boil the water, add the butter and rice and cook in low heat for about 20 minutes or until soft (add more water if necessary, even though it should not be).
Caramelise the sugar in another pan, add the milk carefully with the clove, and boil until all the caramel has melted.
Lower the heat, add the condensed milk, the cooked rice and the nutmeg. Simmer for about 15 to 25 minutes until all the ingredients are well combined and the rice pudding is thicker.
Turn the heat off, add the double cream, sprinkle with cinnamon and serve.
If you fancy the skin over the pudding, put yours in a ramekin and take it to a 180 degrees preheated oven until golden brown on the top.

Brazilish Arroz Doce

Eu amo arroz doce, o brasileiro ou o "rice pudding" inglês, não importa, eu adoro!
A principal diferença entre eles é que o brasileiro é bem doce (bem mais doce) e o inglês é mais brando (a razão pela qual é normalmente servido com compotas de frutas, eu acredito). E eu achei que era hora de misturar essas duas versões da mesma sobremesa e fazer a minha própria, a Brazilish receita...
Meus ingredientes:

200g de arroz
650ml de água
1 colher de sopa de manteiga
75g de açúcar
500ml de leite
150g (meia lata) de leite condensado
200g de creme de leite
1 cravo
1 colher de chá de noz-moscada ralada
Canela para servir

Ferva a água, junte a manteiga e arroz e cozinhe em fogo baixo por aproximadamente 20 minutos ou até ficar macio (acrescente mais água se necessário, mas acredito que não seja).

 
Caramelizar o açúcar em uma outra panela, adicione o leite com cuidado com o cravo, e deixe ferver até que o caramelo derreter.
Abaixe o fogo, acrescente o leite condensado, o arroz cozido e a noz-moscada. Cozinhe por cerca de 15 a 25 minutos até que todos os ingredientes estejam bem combinados e o arroz doce tiver engrossado.
 
Desligue a chama, adicione o creme de leite, polvilhe com canela e sirva.
Se gostar daquela camada que aparece depois que o arroz doce esfria, coloque o seu em um ramekin e leve a um forno pré-aquecido a 180 graus até dourar.

Mummy's Pancake

There are many different recipes for pancakes and, obviously, my favourite is my mum's one!
As I've said before on the "Food and I" post, my mum is a chef and one of the best I've ever known, and her recipes always work for me! Even though sometimes I adapt them to my taste.
The pancake recipe can be used for sweet and savoury fillings. Here is the ingredients list:
250g of plain flour
100g of corn flour
2 cups of milk
2 eggs
1/2 tsp of salt
A pinch of baking powder
Butter - to grease the frying pan
Beat all the ingredients in a blender and leave it to rest for, at least, 30 minutes, meanwhile it is a good idea to prepare the fillings and sauces you want to have with your pancake.
Here I've done chicken, spinach and mozzarella filling with bechamel sauce for main course as well as nutella and double cream for desert. But I would also recommend a ham, cheese, tomato (all finely chopped) with oregano filling and tomato sauce. Delicious!!!
I am posting the video of how I cook the pancakes, but if you're not as confident with flipping them in the air, just do it with the help of a fork.
 
I am not "listing" the fillings ingredients, as I believe you will do as you like, but I will describe what I've done anyway...

For the filling: Fry 2 chicken breast chopped in 1 tbsp of butter and 1 of olive oil. Mixture 1 tsp of garlic paste and fry until the chicken pieces are golden brown. Add one medium onion finely chopped and fry all until onion goes soft. Turn the heat off and add about 100g of spinach and 1 ball of mozzarella, both chopped.
For my bechamel sauce: Fry 1 finely chopped onion in 2/3 tbsp of butter and 1/2 of olive oil. Add a clove, a pinch of nutmeg and a full tbsp of garlic paste and fry until golden. Add 3 cups of milk and in another cup of milk dissolve 1 and 1/2 tbsp of corn flour. Season to taste. Remove the clove, blend the sauce and sieve it, if you prefer your bechamel nice and soft (I don't mind the texture of the onion, but if you're doing for other people I would recommend you to do so).
Fill the pancakes with your mixture.
Fold the sides.
And place them in a baking tray.
Cover with cheddar cheese.
Put the bechamel over the pancakes and sprinkle Parmesan cheese and some black pepper.
Bake in a preheated oven on 180 degrees Celsius for about 20 minutes.
Serve hot. The picture below does not look so appetising but I can guarantee it was delicious!
For the desert one I spread 2 tsp of nutella on the pancake, folded and served with a tbsp of double cream (could have been ice cream if I have had any on my freezer)! Yummy!

Panqueca da Mamãe

Há muitas receitas diferentes para panquecas e, obviamente, a minha favorita é um da minha mãe! Como eu disse antes no post "Comida e Eu", a minha mãe é chef e uma das melhores que eu já conheci, e suas receitas sempre funcionam para mim! Mesmo que às vezes eu adapte algumas ao meu gosto. A receita de panqueca pode ser usada para recheios doces e salgados. Aqui está a lista de ingredientes:
 250g de farinha de trigo  
100g de amido de milho  
2 xícaras de leite  
2 ovos  
1/2 colher de chá de sal  
Uma pitada de fermento em pó  
Manteiga - para untar a frigideira 
Bata todos os ingredientes no liquidificador e deixe descansar por, pelo menos, 30 minutos, então, enquanto isso, é uma boa idéia preparar os recheios e molhos para a sua panqueca. 
Aqui eu fiz recheio de espinafre, frango e mussarela com molho bechamel para prato principal, e nutella e creme de leite para sobremesa. Mas também gostaria de recomendar o recheio de queijo, presunto, tomate (tudo bem picadinho) e orégano e molho de tomate. Delicioso! Estou postando o vídeo de como eu cozinho as panquecas, mas se você não está tão confiante em virá-las no ar, faça com a ajuda de um garfo.

Eu não vou "listar" os ingredientes dos recheios, como eu acredito que você vai fazer o que quiser, mas vou descrever o que eu fiz de qualquer maneira ...
 
Para o recheio: Frite 2 peitos de frango picados em 1 colher de sopa de manteiga e 1 de azeite. Mistura 1 colher de chá de pasta de alho e frite até que os pedaços de frango estejam dourados. Coloque 1 cebola média picada e frite tudo até a cebola ficar macia. Desligue o fogo e acrescente cerca de 100g de espinafre e 1 bola de mussarela, ambos picados. 
Para o molho bechamel: Frite 1 cebola picada em 2/3 colheres de sopa de manteiga e 1/2 de azeite. Adicionar um cravo, uma pitada de noz-moscada e uma colher de sopa cheia de pasta de alho e frite até dourar. Adicione 3 xícaras de leite e em outra xícara de leite Dissolva 1 e 1/2 colheres de sopa de amido de milho. Tempere a gosto. Retire o alho, bata o molho no liquidificador e passe em peneira, se você preferir o bechamel macio (eu não me importo com a textura da cebola, mas se você está fazendo para as outras pessoas eu recomendo que você faça isso).
Preencha as panquecas com sua mistura.
 
Dobre os lados.
 
E coloque-os em uma assadeira.
 
Cubra com queijo cheddar.
 
Coloque o bechamel sobre as panquecas e polvilhe queijo parmesão e um pouco de pimenta-do-reino.
Asse em forno pré-aquecido a 180 graus Celsius por aproximadamente 20 minutos.
 

Sirva quente. A foto abaixo pode não parecer tão apetitosa, mas posso garantir que estava uma delícia! 
Para a sobremesa eu coloquei 2 colher de chá de nutella na panqueca, dobrei e servi com uma colher de sopa de creme de leite (poderia ter sido sorvete se eu tivesse algum no meu congelador!) Delícia!

"Do It Your Way" Muffins

I have been desperately researching for interesting recipes to share here with you and I think this one is great!
The practicality of this muffin recipe is impressive as you can do it your own way, add whatever you like to give it your favourite flavour (sweet or savoury).
The basic recipe is as it follows:
"DRY" ingredients
2 cups of plain flour
1 cup of sugar
2 tsp of baking powder
1/2 tsp of salt
"WET" ingredients
1/4 cups + 2 tbsp of vegetable oil - I know that the measuring is wierd but it does the trick
1 egg
3/4 of milk - apporximately as you will need to adjust as you go
"YOUR" ingredients
1 cup of whatever you would like to put on your muffins - I have divided the basic batter in 3 and added to each third my experiments:
1/3 cup of chopped dried figs and blue cheese for the first third of batter,
1/3 cup of chopped pistachio nuts and blue cheese for the second third, and
1/3 cup of dark and milk chocolate chips for the last third
Heat the oven at 200 degrees Celsius (180 fan).
Sieve the plain flour, sugar, baking powder and salt and stir them all together.
In another bowl, beat the egg with the oil. Make a well in the "dry" ingredients and pour the egg and oil mixture. Mix them well and add half of the milk. Stir until combined and add "your" ingredient.
If your choice of ingredient is wet (such as fruits like banana or pineapple) you might not need much more of the milk but if it is dry (such as nuts or dried coconut) you might need to add a little bit more than stated on the ingredients list. Remember that the batter should not be too runny or too solid.
Grease your muffin tin or just scoop the batter into your cupcakes (2/3 of the cupcake) and bake for about 20 to 30 minutes or until golden brown.
 
PS: If you chose a savoury ingredient to your muffin I would recommend to put only 1/3 of the sugar and add another pinch of salt to your batter.
Enjoy them! From my experience, my husband's favourite was the pistachio nuts and blue cheese ones and mine was the dried fig and blue cheese. Which one is yours????

"Faça do Seu Jeito" Muffins

Andei desesperadamente pesquisando por receitas interessantes para compartilhar aqui com vocês e eu penso que esta é ótima! 
A praticidade desta receita de muffins é impressionante considerando que você pode fazer do seu próprio jeito, adicione o que você quiser pra dar ao seu muffin seu sabor favorito (doce ou salgado). 
A receita básica é como segue:
Ingredientes "SECOS" 
2 xícaras de farinha de trigo 
1 xícara de açúcar 
2 colheres de chá de fermento em pó 
1/2 colher de chá de sal 
Ingredientes "MOLHADOS" 
1/4 xícaras + 2 colheres de sopa de óleo vegetal - eu sei que a medição é estranha, mas funciona  
1 ovo 
3/4 xícaras de leite - aproximadamente já que você terá que ajustar de acordo com seu ingrediente 
"SEUS" ingredientes 
1 xícara de qualquer coisa que você gostaria de colocar nos seus muffins - Eu dividi a massa básica em 3 e adicionado a cada terço minhas experiências:
1/3 xícara de sopa de figos secos e queijo azul (tipo gorgonzola) para o primeiro terço da massa, 
1/3 xícara de pistache picado e queijo azul para o segundo terço, e 
1/3 xícara de chocolate escuro e leite para o último terço.
Aqueça o forno a 200 graus Celsius. 
Peneire a farinha, o açúcar, o fermento e o sal e misture tudo junto. 
Em outra tigela, bata o ovo com o óleo. Faça um buraco nos ingredientes "secos" e despeje a mistura de ovo e óleo. Misture bem e acrescente metade do leite. Mexa até combinar e acrescente o "seu" ingrediente ou "seus" ingredientes. 
Se a sua escolha de ingrediente for molhada (como frutas tipo banana ou abacaxi), você provavelmente não vai precisar de muito mais do leite, mas se a sua escolha for seca (como frutas secas ou coco ralado), talvez seja necessário adicionar um pouco mais do que indicado na lista de ingredientes. Lembre-se que a massa não deve ser muito mole ou muito sólida. 
Unte a sua forma para muffins (ou de empadinha) ou simplesmente coloque a massa em copinhos de papel como os de "cupcake" (cloque a massa até 2/3 do copinho) e asse por cerca de 20 a 30 minutos ou até dourar. 
Obs: Se você escolheu um ingrediente salgado para o seu muffin eu recomendaria usar apenas 1/3 do açúcar e também adicionar outra pitada de sal à sua massa. 
Aproveite! Da minha experiência, o favorito do meu marido foi o de pistache e queijo azul e o meu foi o de figo seco e queijo azul. Qual é o seu??
